Will H.C. grow over rocks and grow into a sand substrate??

HC will grow over and in pretty much anything given half a chance; obviously within reason (bigger rocks its roots can't get a hold in will prove an obstacle for instance), and so long as it's fed water column fertz. It will thrive emersed as well.
Even offcuts from trimming will take hold somewhere, somehow, if they're not removed. It can actually become a pain in the ass.

Thanks Tim. I see you have an algae inhibitor in the tank. Where do you have your CO2 coming into the tank?
One more question: How often do you trim the HC?

The CO2 is delivered through an inline atomiser, and comes in through the lily pipe outlet, left in the image.
How often you need to trim really depends on light intensity, CO2, and fertz regime.
I usually trimmed once it started to get about 2 cm thick or so, for me that was once every 6 weeks.
If you leave it any longer the roots will die back and your carpet will start to float
