Caught my Amano eating a plant

Destroying it really, and it was a very healthy growing plant. If it's because I am not feeding them enough, message received!

Given that I don't have algae I started feeding the shrimp every day and no more occurrence of eating plants until today. I added a few new stem plants (alternanthera reineckii) and I saw one of the shrimps eating the leaves again. Is this normal with Amanos?

I am going away for a week so the shrimp won't get fed during that time and I wonder if there will be anything left in the tank when I get back! Suggestions?

I was feeding them daily when this happened last time! What is considered enough feeding?

I am away for a week, I guess I may encounter an empty tank when I get back!
