I was just wondering why do we keep the plant in the path of a water flow?

    It's not required.

But it does do well there also, I have always have explosive growth where the plant is exposed to high CO2 misting, and a slight current, this is true for most plants however, not just this one.

It is a river/stream plant in it's natural; habitat also, so many assume that is best.
That may or may not be the case.

I have noticed with both c02 and non-c02 enriched tanks, that it does grow better when positioned to get a better current.

Anecdotal of course, but is my experience.......
